blueberry-buttermilk muffins

preheat oven to 350 degrees. grease muffin tins or line with cupcake cups.

2 cups cake flour
3/4 cup granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
3 oz cream cheese, softened and cut into pieces
1 tsp vanilla
2 eggs
1/4 cup salted butter, melted
1/2 cup buttermilk
1 cup fresh blueberries, washed and patted dry

cream together the butter, cream cheese, buttermilk and sugar. add in vanilla and eggs, then dry ingredients. fold in blueberries carefully. spoon into muffin tins.
bake for approx 30 minutes, or until pick inserted in center comes out clean.

this receipe will make 9 large muffins, 12 -15 medium muffins and 24 gems.

oh dear. we grow blueberries and i want to bake these blueberry recipes. do you think they stop being healthy when i add all that cream cheese??!!
